Food manufacturers may encounter the same chemical or functional ingredient offered in food-grade, pharmaceutical, feed, cosmetic, laboratory or technical grades. Although the product name may appear identical, the permitted use, specification limits and manufacturing controls can differ substantially.

A food-grade designation generally indicates that the product is intended and controlled for use in food applications under relevant supplier, customer and regulatory requirements. A technical-grade material is normally intended for industrial processing, manufacturing, cleaning, construction or other non-food uses.

The distinction should not be made using assay or purity percentage alone. A technical-grade product may show a high main-component concentration while still having an unsuitable impurity profile, unapproved processing aids, insufficient traceability or packaging that is not designed for food manufacturing.

Important buyer note: a product should not be treated as food grade simply because its name, formula or assay resembles a recognized food additive. Intended use and documented compliance must be confirmed for the exact product and manufacturing source.

Purity is not the only criterion

Purity or assay indicates the amount of the main component measured using a defined method. It does not, by itself, describe every impurity or establish that the manufacturing process is suitable for food use.

For example, two products may both show an assay above 99%, but one may have tighter limits for lead, arsenic, mercury, residual solvents or insoluble matter. The products may also differ in raw-material origin, processing aids, cleaning procedures, packaging and traceability.

A product may satisfy a recognized food-chemical specification but still require confirmation of its permitted use in the final application. Conversely, a supplier’s general statement that a product is food grade may be insufficient if it does not identify the applicable standard or regulatory basis.

Buyers should ask suppliers to state which specification, monograph, regulation or internal standard the product is manufactured to meet. Final compliance decisions should be reviewed by qualified regulatory personnel.

Practical buyer note: ask suppliers to quote the exact food-grade product and attach its current specification. Do not accept a technical-grade quotation with the expectation that it can be approved later solely on the basis of a similar chemical name.
